1/2 red cabbage, finely shredded
1 carrot, coarsely grated
1 apple, cut into fine matchsticks
1/3 cup whole egg mayonaise
1/2 cup poppy splash
Whisk mayonnaise & poppy splash together in a bowl.
Taste and adjust if necessary. Toss in remaining ingredients and combine.
Hint - you can add cooked chicken for a more filling salad.
